Nobu Las Vegas is Nobu Matsuhisa's restaurant at the Hard Rock Hotel in Vegas. I've only been there once and feel like I need to go back to do it justice, as if the restaurant is flirting with very good but didn't quite get there on my first trip. The decor is very cool - typical Vegas hip - but the service is a bit off with mostly young 20-somethings in all black providing service. A generalizable complaint about the Vegas service industry right now, Nobu is pandering to the Paris Hilton set (just like N9ne Steakhouse at the Palms, which pulls it off because the food is not the main attraction like at Nobu).
